Lemon Pepper Bread

You can make this bread in under an hour.  The pepper and lemon rind give it a wonderful fragrance and taste.

2 cups flour
2 Tbsp baking powder
1/2 tsp salt
1 tsp fresh lemon rind
2 tsp freshly ground black pepper
3 Tbsp butter
1 Tbsp fresh chives, chopped finely
3/4 cup cheddar cheese
2 tsp vinegar
3/4 cup milk

  • Sieve flour, baking powder and salt into a bowl
  • Add lemon rind and black pepper
  • Rub the butter into the flour with your fingers. until it resembles bread-crumbs
  • Add cheese and chives
  • Combine vinegar and milk and add to flour mixture
  • Knead until the dough is smooth
  • Shape dough into a round ball and place on greased baking tray.  Flatten slightly with your hand so it is about 3cm tall, and make two or three, 1cm cuts into the top.  Sprinkle with a little flour
  • Bake at 210 C for 30-40 minutes.  When it is cooked, the bread will sound hollow if  you tap the bottom

Cool for 10 minutes before slicing, or it will crumble
