Shrove Tuesday is the day before the 40 days of fasting for Lent. Rich foods such as eggs, butter, milk, and sugar had to be used up and what better way than in pancakes? Make up a batch and sprinkle with sugar and lemon, or sugar and cinnamon for a quick and easy treat
200g Plain flour
350ml milk
2 large eggs
1 Tbsp oil
pinch of salt
Oil for frying
Combine the flour, milk and eggs in a bowl.
Whisk or stir well until there are no lumps
Add 1 Tbsp oil
Leave to stand for about 30 minutes
Heat a frying pan and add a drop (no more than 1/2 tsp) of oil
Swish it around the pan and then add a ladle of pancake batter. It should be just enough to thinly cover the pan. Using too much will make the pancakes thick
Swirl it around and cook for 30 seconds. The sides will start to crinkle.
Flip it over and cook for another 30 seconds
Don’t be alarmed if the first one doesn’t work….It is known as the sacrifice to the god of the griddle!
Slide it on a plate and cook some more!
