This only takes 5 minutes to make, so is ideal as a side dish for one of our family meals, or add some chicken or fried tofu and have it as a quick lunch
300g Chinese noodles ( or 2 pkts 2 minute noddles without the spice)
2 Tbsp crunchy peanut butter
2 Tbsp rice vinegar
3 Tbsp soya sauce
1 Tbsp honey
2 Tsp fresh ginger, grated
1 finely chopped chili (optional)
2 Tbsp oil
1/2 cup cashew nuts, roughly chopped
Fresh coriander or mint (optional)
Cook the noodles per packet instructions
Combine all other ingredients except the herbs
When the noodles are cooked, drain well and stir in the sauce and chopped herbs if using.
Serve
