Quick Seed Bread

Seed bread

This is a fabulous recipe as no kneading required.  It takes about 10 minutes to mix and an hour to cook.  Please note – sunflower seeds turn green when cooked with bicarb – don’t be alarmed!  If you use dried fruit soak it in water or milk for about an hour.  It keeps the bread moist as the fruit isn’t absorbing the moisture in the bread

2 cups plain yoghurt

2 Tbsp milk

2 Tbsp honey

2 tsp bicarbonate of soda

3 cups nutty wheat flour

1/2 cup sunflower seeds

1 cup mixed other seeds and/or nuts/dried fruit (flax seed, sesame, chopped almonds, cashews, etc)

1 Tbsp seeds for top of loaf

1 tsp salt

Preheat oven to 180 C.

Grease a standard loaf tin and place a piece of baking paper at the bottom (or the paper from butter)

Mix yoghurt, milk, bicarb and honey together in a bowl

Combine the remaining ingredients in another bowl.

Pour the yoghurt mix into the flour and combine well. The mixture will be stiff.  If it is dry, add a little more milk

Put it into the loaf tin, smooth the top and sprinkle with the extra seeds.

Bake for an hour or until a knife comes out clean
